Gluten Free Drop Biscuits

Yay! I got my order of gf flours yesterday...and then the power went out. Go figure. Today I have made three batches of all-purpose flour to try out. Here are drop biscuits I made from "Experiment #1".

Flour ingredients: 
1/2 cup sorghum flour
1/2 cup brown rice flour
1/8 cup millet flour
1/8 cup buckwheat flour
1/8 cup quinoa flour
1/8 cup sweet white rice flour
1/2 TBS + 1/2 tsp glucomannan powder

Biscuit recipe:
1 3/4 cup flour above
1 TBS baking powder
1 tsp salt
6 TBS cold butter, cubed
1 cup almond milk -plus enough water to make a 'drop' biscuit dough consistency

Directions:
Preheat oven to 450*F. 
Mix flour well beforehand; add baking powder and salt. Mix. Cut in butter until resemble coarse crumbs. Add almond milk and water until desired 'drop' consistency is reached.
Grease cookie sheet. Drop spoonfuls of dough onto cookie sheet. Bake for about 17 minutes, until golden brown on top. Makes 15-18 biscuits. 


I chose to use almond milk so that I could eat these {butter, occasional cottage cheese and smidgen of greek yogurt is all I can seem to tolerate}. After all I am the only one that is choosing to be gf in the house. I would have used all almond milk but I ran out before I'd reached the right consistency. Water worked just fine. 

These were very yummy. I am so surprised, honestly. This is the second or third time that I have tried to make gf biscuits that I didn't end up throwing away. Nutritionally, I'm not sure these are wonderful but I can definitely see myself eating these occasionally.

I would like to experiment some more to lower the fat and raise the protein. And I might increase the baking powder, or use a combination of soda and powder. But really these were yummy. The kids even liked them *wink*.

  1. Thanks for posting gluten free recipes... so far I have been OK not eating bread and typical bread things, but sooner or later I will need something like biscuits or banana bread... LOL.

  2. I haven't found a good gf biscuit, so I need to try these! I have noticed that combining flours is usually better than a gf mix.
