That's the week's menu. Lots of variety unless you count the mornings with cereal. It's hot; we have no a/c. This morning {Tuesday} when I had my coffee, it was iced.
Crockpot coconut chicken curry sounds interesting. I used to have a recipe for chicken curry that we loved. But I don't know what happened to it! Would you mind sharing the recipe?
ReplyDeleteAlso, did you know you can make cheesecake in a crockpot? I certainly didn't know that. I ran across a recipe last week for a chocolate cheesecake that you make in a crockpot. It looks absolutely delicious! I've been wanting to make it from the moment I saw the recipe.

Hi, Karen. The recipe is super easy- there isn't any measuring even! My crockpot is 7 qt. I used chicken breast, 1 can coconut milk, 1 can water, 1 package green curry sauce, a handful each broccoli and cauliflower. I seasoned it with salt, pepper, and a little curry powder. It cooked on medium (mine only really has two settings- medium and hot) from about 11am until dinner time around 6pm. The veggies I added much later in the evening though so they wouldn't be too soggy. I'd never had curry (that I know of, most assuredly never cooked it!) before so I erred on the side of caution; it definitely could have used more!
