It seems that I am very forgetful lately. Yesterday, in the middle of a sentence I totally lost my thought. Just like that. How weird is that??
But while I’m here and the thought is still in my mouth, er, mind, I will share a coffee cake recipe that I used to make breakfast this morning.
Honey-Butter Coffee Cake
Ingredients:
2 1/2 cups flour
1 cup white sugar
1/4-1/2 cup honey
2/3 cup butter (I used 1 stick of butter and 2 TBS of my better butter)
1 TBS baking powder
1/2 tsp nutmeg
1/2 tsp cinnamon
2 eggs, beaten
1 1/3 cup sour milk (or buttermilk if you have it) [I used milk with a bit of orange juice and vinegar to create sour milk]
Directions:
Preheat oven to 350*F. In a large bowl sugar and honey with a fork. Mix it as much as possible. Add flour and salt. Cube butter (if desired) and cut into flour mixture until it is coarse and crumbly. Set aside 1/2 cup. Add baking powder, nutmeg and cinnamon to the flour mixture in the bowl. In a separate bowl mix milk and eggs then add to flour mixture. Stir just until moistened.
Pour into a greased/oiled 9x13 pan and sprinkle reserved flour mixture on top. Bake for 40 minutes then test for doneness with a toothpick.
Super yummy. And yes, super sugary sweet. My heart is busy pumping all the toxins out of my system as I type this. This makes a lot…I’d suggest s.m.a.l.l. pieces
