Spices Spices Spices
Who doesn't use at least some? Here's what I usually use:
Salt. Pepper.
Yep, that's it. We have a shelf full of spices that are left unused (ew, now that I think about it, there's some from when I was first married- almost 14 years ago!!) because first and foremost, I am a bland food type person. Second, I just never learned how to use spices right and usually it tastes like I have a little food with my spices or I've not put enough and you can't taste it.
I learned about Geno's from my mom's blog (her Help for a Friend post). I decided to check out what was offered. As mentioned, I don't usually use spices but when I see something that is titled "All Purpose"- that fits me. I wanted something to use on EVERYthing.
I placed my order and within a day I received a personal email from Gene (aka Geno) himself. He put me on his newsletter mailing list also (with my permission of course!). We've chatted back and forth through email and he is a swell guy. He suggested I not use the All Purpose Seasoning on my pancakes or waffles however... I'm going to try it on johnny cakes and potato cakes though and I'll let ya know how that turns out :)
These came to me in a Priority Mail flat rate mailer well packaged and cushioned inside. The All Purpose and Brisket Rub came in little 'mason jar' with wire clips. I love those jars! In the box were also two samples of Florida Flavorite and Chili Mix in small plastic ziplock baggies. I also received the rack to hold the spices. Perhaps in anticipation for when I buy more spices ;) The rack has a rope handle but my rack simply sits on the counter.
All Purpose Seasoning
The note that came with my order says to use about 1 tsp per pound of meat. The first time I used this was on burgers. I sprinkled 1/4 tsp on each 1/4 lb patty. I swirled it into each patty, like a rub, I suppose. I covered them and put the plate in the fridge for about 45 minutes. Then I used my Hamilton Beach grill to cook the patties.
The taste? GOOD! I only put it on one side of the patty because my dd is a bland food lover like me and said "just put it on one side!" Next time, it goes on both sides. I also added a bit of salt.
I thought the brown sugar that is in the spice blend would be weird but it is just enough to enhance the flavor.
The second time I used this was for my Creamy Tuna over Mashed Potatoes. I usually use a different spice blend for this but it is usually too spicy (hot). I used 1/4 tsp with this also. Yummy!! Next time I think just a bit more will be good.
Although I have not tried my other spice yet (I have no idea when we will get some Brisket... or wild game) but I am gauging by the smell that it will be good. I am going to make chili in the crockpot today and Geno just happened to send me a sample of the Chili Mix and it smells awesome! I will update this review when we do use these spice blends.
Also available from Geno's Camp 'n' Kitchen is a cookbook which I've not had the pleasure of perusing but if it is anything like the recipes that are included with the newsletter, it is guaranteed to be good!
